Mexican Avocado Orange Salad

This green salad bursting with citrus flavour will go with any Mexican inspired meal from tacos to pork carnitas.

Ingredients

  • 1 avocado, peeled and chopped
  • 2 tomatoes, chopped
  • 2 oranges, peeled and chopped or segmented
  • cup frozen corn, thawed
  • ¼ cup minced red onion

LIME VINAIGRETTE

  • 6 tablespoon olive oil
  • 2 tablespoon lime juice from 1-2 limes
  • salt & pepper to taste

SERVING

  • red lettuce leaves to line the platter
  • 2 tablespoon chopped cilantro

Instructions

MAKE LIME VINAIGRETTE*

  • In a small bowl whisk oil and lime juice together.
  • Add salt and pepper to taste.

TOSS SALAD

  • Combine all salad ingredients in a large salad bowl. Pour vinaigrette over salad, add cilantro and gently toss.
  • Line platter with whole lettuce leaves. Mound salad in the center of the platter and sprinkle with cilantro.

Notes

*VARIATIONS: Add ½ teaspoon cumin and/or ½ teaspoon chili powder for more seasoning.
