Mexican Avocado Orange Salad
This green salad bursting with citrus flavour will go with any Mexican inspired meal from tacos to pork carnitas.

Ingredients

avocado, peeled and chopped
2
tomatoes, chopped
2
oranges, peeled and chopped or segmented
⅔
cup
frozen corn, thawed
¼
cup
minced red onion
LIME VINAIGRETTE

tablespoon
olive oil
2
tablespoon
lime juice
from 1-2 limes
salt & pepper to taste
SERVING
red lettuce leaves to line the platter

chopped cilantro

Instructions
MAKE LIME VINAIGRETTE*
In a small bowl whisk oil and lime juice together.
Add salt and pepper to taste.
TOSS SALAD
Combine all salad ingredients in a large salad bowl. Pour vinaigrette over salad, add cilantro and gently toss.
Line platter with whole lettuce leaves. Mound salad in the center of the platter and sprinkle with cilantro.
Notes
*VARIATIONS: Add ½ teaspoon cumin and/or ½ teaspoon chili powder for more seasoning.
