Sausage Vegetable Pasta

This is my clean-out-the-fridge pasta recipe that I can make with whatever I have on hand.

Ingredients

  • 8 oz gluten free pasta

SAUCE

  • ¼ cup good quality olive oil
  • 4 oz spicy Italian sausage (1 link)
  • 2 garlic cloves, finely chopped
  • ½ onion, sliced
  • ½ red pepper, sliced
  • ½ teaspoon dried red pepper flakes
  • ¼ cup fresh parsley or cilantro, chopped

FINISHING

  • ¼ cup Parmesan cheese, grated
  • freshly ground pepper

Instructions

  • Heat oil in large frying pan on medium high heat.
  • Add sausage, onion, pepper, garlic and red pepper flakes.
  • When sausage is browned remove and slice. Return to pan and continue cooking until vegetables are soft, about 10 minutes total.
  • Add fresh herbs and stir.

PASTA

  • Cook pasta according to package directions. Drain, rinse and gently toss with vegetable mixture. Divide pasta into bowls.
  • Sprinkle with Parmesan cheese and freshly ground pepper. Serve.
