Sausage Vegetable Pasta
This is my clean-out-the-fridge pasta recipe that I can make with whatever I have on hand.

gluten free pasta
SAUCE
▢

cup
good quality olive oil

spicy Italian sausage

garlic cloves, finely chopped

onion, sliced
▢
½
red pepper, sliced
▢

teaspoon
dried red pepper flakes

cup
fresh parsley or cilantro, chopped

Parmesan cheese, grated

Instructions
Heat oil in large frying pan on medium high heat.
Add sausage, onion, pepper, garlic and red pepper flakes.
When sausage is browned remove and slice. Return to pan and continue cooking until vegetables are soft, about 10 minutes total.
Add fresh herbs and stir.
PASTA
Cook pasta according to package directions. Drain, rinse and gently toss with vegetable mixture. Divide pasta into bowls.
Sprinkle with Parmesan cheese and freshly ground pepper. Serve.
