Corn with Feta and Lime

Corn with feta and lime is an unusual and amazing combination. Once you've had your fill of corn with butter you've got to try this recipe!

Ingredients

  • 8 corn cobs, husked
  • ¼ cup mayonnaise or Miracle Whip
  • teaspoon cayenne pepper
  • ¼ cup crumbled feta cheese
  • 2 limes, cut into wedges

Instructions

  • Combine mayonnaise and cayenne pepper. Set aside.
  • Bring large pot of water to a boil. Add corn and cook for 8 minutes with the lid on. Drain.
  • Spread cayenne-mayo on hot corn, sprinkle with feta and garnish with lime. Serve immediately.

Notes

To serve this on a buffet cut the cobs in 2 or 4 pieces. Slather the cobs with spicy mayo, sprinkle with feta and garnish with lime. Cover with foil or a lid to keep warm. Everyone loves it!
