Warm Spinach Salad with Prosciutto
This salad brings together the classic flavours of pesto; basil, garlic, pine nuts and Parmesan cheese. Like so many homemade salads, it's naturally gluten free.

Ingredients

fresh spinach

fresh basil leaves
cut in half if large
½
cup
extra virgin olive oil

garlic cloves, minced
½
cup
pine nuts

prosciutto
cut in strips
freshly ground pepper
⅓
cup
grated Parmesan cheese
Instructions
Combine spinach and basil together in a large bowl.
Heat oil in a sauté pan over medium heat. Add the garlic and pine nuts, sauté 1-2 minutes until the nuts begin to brown.
Add the prosciutto and cook, stirring, for another minute.
Pour warm dressing over spinach mixture and toss.
Top with lots of freshly grated Parmesan cheese and black pepper.
