This is the best method for crispy chicken wings. Cooked on the barbecue these crispy grilled gluten free Sriracha Honey Chicken Wings are perfect every time. Resist anything that comes out of a box, these are ingredients you've got in your fridge already.
For Happy Hour on the patio I like to add a vegetable like Boconccini Cherry Tomato skewers. If fresh figs are available I might make grilled figs stuffed with cheese, chorizo stuffed dates or the simplest ever, Manchego cheese with quince paste.

Chicken wings know no season so don't put this recipe away for winter. It's all about the method and these are ideal for game day parties, impromptu get togethers and those nights you're just craving wings.
- Chicken wings - They are the perfect size for some finger-lickin' deliciousness.
- Baking powder - This is the secret ingredient, as long as you follow the 2-step process.
- Paprika - Adds to the colour and flavour.
- Honey, Sriracha sauce & rice vinegar - For the perfect balance of sweet, heat & acid.

Instructions for Crispy Wings
Sprinkling the raw wings with baking powder (and paprika), TWICE, creates the best crispy coating as they cook. When my teenage son wanted to learn to eat more heat we experimented with chicken wing recipes and this became our go-to method. The wings can be served right off the grill with sauce on the side for dipping or simply toss them in a big bowl and dump them onto a platter. Guaranteed to be finger lickin’ good!
Substitutions & Variations
Wings - You can use thighs, wings just give the best ratio of meat to crispiness.
Dry Mix - This is where you can substitute with the spices that go with the sauce you're making.
Sauce - Using the same dry mix and this method you can make any flavour of wings you want. Host a Wing Night with these Sriracha Honey Chicken Wings, Honey-Garlic and Salt & Pepper. Or if you're that kind of cook, just wing it!
Top Tip for Gluten Free Cooks
Buy a Reusable Grilling Sheet. They're heat-resistant, can be cut to size, go right on top of the grill and still give you the grill marks you want to see. These allow you to cook on any barbecue anywhere, and avoid worry about cross contact with gluten containing foods. Buy them at a barbecue store, kitchen store or on Amazon.

Gluten Free Sriracha Honey Chicken Wings
Ingredients
- 2½ lb chicken wings, separated (about 36 pieces)
DRY MIX
- 2 tablespoon baking powder
- 2 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
SRIRACHA HONEY SAUCE
- ⅓ cup honey
- 2 tablespoon Sriracha sauce (if you like the heat go for 3 Tbsp)
- 1 tablespoon rice vinegar
GARNISH
- sesame seeds
Instructions
SRIRACHA HONEY SAUCE
- Combine honey, Sriracha and vinegar. Set aside.
DRY MIX
- Combine baking powder, salt, black pepper and paprika in a small bowl.
2-STEP PROCESS
- Sprinkle half the dry mix over the wings and toss gently. Let them sit until you are ready to cook.
- Repeat by sprinkling the remaining dry mix over the wings. Toss and cook using your preferred method.
GRILLING METHOD
- Set baking rack 5-inches above the heat (I used barbecue bricks to hold up the racks). Preheat barbecue.
- Place wings on rack in a single layer. Close lid and grill for 15-20 minutes. Turn chicken and grill another 15 minutes or until crisp and golden.
- Transfer wings to large bowl and pour sauce on top. Toss. Sprinkle with sesame seeds and serve.
OVEN BAKED METHOD
- Preheat oven to 425°F. Line cookie sheet with foil and place cooking rack on top. Oil rack.
- Place wings on racks in single layer. Bake in oven for 20 minutes. Turn chicken over and cook another 20 minutes or until crisp and golden.
- Transfer wings to large bowl and pour sauce on top. Toss wings with sauce, sprinkle with sesame seeds and serve.
