This Zucchini Noodles recipe (zoodles) is perfect for gluten free cooks. Skip the noodles and keep the veg! This is a quick and easy late-summer recipe that everyone likes. If gardeners are trying to give you zucchini, take it and make zoodles.
One September I found a small hand spiralizer at a checkout somewhere and bought it. Videos of spiralizing zoodles were popular and I made this zoodle dish for the annual Farm To Table meal our Gourmet Dinner Club had. This vegetable focused dinner has become a fun event that challenges each of us to cook something straight from the garden.

Ingredients
I sometimes see spiralized vegetables packaged in the produce section but it's hit and miss. You also pay more every time someone (or a machine) has to handle your food. If you're trying to keep your grocery bill in line then learn to love the prep.
- green or yellow zucchini
- olive oil
- garlic
- shallot or onion
- cherry tomatoes
- fresh basil
- Parmesan cheese
- Optional Garnish – zucchini blossoms

Instructions
It's a little more effort but you can hand cut zucchini if you want to try it without the gadget. Use a vegetable peeler to peel long, thin zucchini ribbons and then further cut them into thin strips the length you want.
Substitutions & Variations
Zoodles - You can cook the wide zucchini ribbons made with the peeler. They will look similar to pappardelle pasta but will cook in about the same time as the spirals.
Zucchini - If you buy a gadget to spiralize go beyond zucchini and summer squash noodles. Try apple, beet, carrot, cabbage, cucumber, parsnips, turnip, potato, sweet potato and butternut squash.
The cooking times will vary but you'll find new recipes and surely there will be a favourite among them. Try your spirals in salads too.
Equipment
The right tool for the job is always the quickest which means the easiest to me. If you're new to gluten free making cooking fun can be a positive way to focus your energy in the kitchen. If the idea of a new tool sounds like fun, buy it!

Zucchini Noodles Recipe (Zoodles)
Ingredients
- 2 medium zucchini
- 2 tablespoon olive oil
- 1 garlic clove, minced
- 1 shallot, finely chopped (or 2 tablespoon onion)
- 6-8 cherry tomatoes
- ½ cup fresh basil leaves, cut or torn if large
- ¼ cup grated Parmesan cheese
- salt and pepper to taste
- OPTIONAL – zucchini blossoms for garnish
Instructions
- Trim and spiralize zucchini. Alternately, make long ribbons using a vegetable peeler and slice into thin strips.
- Heat oil over in large saucepan over medium heat.
- Add garlic and shallot, cook for 2 minutes.
- Increase heat to medium high then add zucchini in centre of the pan and place cherry tomatoes around the edge.
- Gently turn the zucchini noodles using tongs or a pasta stirrer, making sure all zucchini touches the pan. Cook for 4-5 minutes until zucchini is wilted but still has a crunch.
- Add basil, Parmesan cheese, salt and pepper. Stir and cook for 1 minute.
- Garnish with zucchini blossoms if available. Serve immediately.
