    Gluten Free Chocolate Truffle Brownies

    These gluten free chocolate truffle brownies are a cake-like brownie made with quinoa flour. Gluten free cooks who are open to trying new flours and new recipes will have no end to adventure in their kitchens. This basic recipe can be varied in many ways and garnished with colourful candies for every occasion.

    Being naturally gluten free this is the kind of brownie recipe you should share with the whole family. Even if you'll never eat what they make (not everyone is trustworthy) it's a step toward people understanding that wheat flour is no longer essential for baking.

    Ingredients

    I've taken all my different brownie recipes to school meetings, work meetings, potlucks and given plenty as gifts to teachers, neighbours and friends. Whether I deliver them in little cellophane bags with pretty ribbon or pile them on a tray topped with m&m's (gluten free!) everyone loves them.

    • unsweetened chocolate
    • butter & sugar - There's no getting around these two ingredients if you want delicious brownies.
    • eggs
    • vanilla extract
    • quinoa flour
    • milk
    • OPTIONAL: nuts

    5 Ways To Serve Brownies for Dessert

    I love making brownies look like the magazine photos I was loved looking at when I was learning to cook. We eat with our eyes first so I always try and make my plates look nice. I might even use a hot knife and a ruler to cut them perfectly.

    Then just use your imagination and present your chocolate truffle brownies in your own style using the seasons as a guide. Here are 5 ideas to get you started.

    1. Valentine Brownies: Add white chocolate chunks and bake your brownies in a heart shaped pan for Valentine's. Drizzle with melted white chocolate and add some Valentine sprinkles for colour.
    2. Coffee Addict Brownies: Add chopped chocolate-covered coffee beans and some instant coffee to the batter. After cutting them, top each brownie with a dab of whipped cream, icing or melted chocolate and single chocolate-covered coffee bean.
    3. Nuts About Chocolate: Add roasted nuts to the batter. Drizzle cooked brownies with melted white chocolate in one direction and dark chocolate in the opposite direction. Cut into tiny squares or triangles and top with a single raspberry or an edible flower.
    4. Chocolate and Berries: Baked in a round pan with a removable bottom. Serve whole on a pedestal tray topped with a generous amount of whipped cream and pile on any combination of fresh berries.
    5. Ice Cream Cake: Cut a square brownie in half horizontally, add a layer of ice cream, the second brownie half and a final layer of raspberry sorbet for a stunning Raspberry Brownie Ice Cream Cake.

    Get The Tools

    Every kitchen needs a few tools and two square baking pans is the most basic tool. You can bake so many things with just these two pans I still think it's amazing. From granola bars to sushi pizza to Australian Lamingtons there is no end to the value of these pans. You don't need the most expensive ones but so yourself a favour and don't buy the cheapest ones either.

    More cake-like than fudgey, these chocolate truffle brownies are made with just quinoa flour and no one knows they're gluten free.

    Ingredients

    • 4 oz unsweetened chocolate
    • ¾ cup butter
    • 1½ cups sugar
    • 3 eggs
    • 2 teaspoon vanilla extract
    • 1¼ cups quinoa flour
    • ¼ cup milk
    • 1 cup chopped nuts (optional)
    Prevent your screen from going dark

    Instructions

    • Preheat oven to 350° F. Line an 8 inch x 8 inch cake pan with foil and lightly grease the foil.
    • In a small pan melt chocolate and butter together over low heat stirring until smooth. Remove from heat. Add the sugar and stir until combined.
    • In a large bowl beat eggs and vanilla together. Add chocolate-sugar mixture to eggs.
    • Sprinkle flour over chocolate mixture. Fold in flour and milk until combined.
    • Fold in nuts if using.
    • Pour into prepared pan.
    • Bake in center of oven for 22-25 minutes until brownie comes away from the sides of the pan but is still moist and fudgy in the center. Cool completely on a wire rack. Refrigerate before cutting.
