This Pomegranate Pear Guacamole is THE BEST dip of the holidays! Piled high in an oversized martini glass, sprinkled with sparkling pomegranate arils this stunning appetizer will stand out at any party. Of course it's gluten free.

Ingredients
Having ripe avocados on the day you want them is an ongoing battle. You can store unripe avocados in the fridge to extend their life, taking them out to ripen when you want one. You can also transfer ripe avocados to the fridge slowing the process of over ripening. My best advice is to always have avocados on hand.
- white onion
- jalapenos
- avocados
- lime juice
- diced pear (fresh or canned)
- seedless grapes
- pomegranate seeds

How To Cut A Pomegranate
Every fruit seems to have a trick. For pomegranates carefully cut them in half them submerge in a bowl of water cut side down. Gently pull the peel away and push the arils out. They'll sink to the bottom and all the white pith will rise to the top.
Some people score the outside of the pomegranate with a knife then peel it. This method completely eliminates the chance of squirting your clothes with the blood red pomegranate juice but it's an extra step I don't bother with. You've gotta take some chances in life!

For holiday entertaining I say "go big or go home." Choose tried-and-true recipes, serve them in fancy or unusual serving dishes and spend a few extra minutes on the presentation.
I love to serve this guacamole in an oversized martini glass. For a smaller gathering fill regular martini glasses and top each one with a single nacho. The guacamole is gluten free but individual servings are often appreciated since they decrease the chance of cross contact with gluten.
Top Tip for Pomegranates
Wear red or black when cutting a pomegranate.
Pomegranate Pear Guacamole
Ingredients
- ⅓ cup white onion, finely chopped
- 2 jalapeno chilies (or 6-8 slices of pickled jalapenos, rinsed)
- 1 teaspoon coarse salt
- 4 ripe avocados
- 2-3 tablespoon lime juice
- ¾ cup finely diced pear, unpeeled is fine by me (use canned if you must)
- ¾ cup quartered seedless grapes
- ½ cup pomegranate seeds
GARNISH
- ¼ cup pomegranate seeds
Instructions
- Puree onion, chiles and salt in a spice grinder or mash to a paste using a mortar and pestle.
- Peel avocados. Add to onion mixture and mash coarsely with a fork or potato masher.
- Stir in lime juice to taste.
- Fold pears, grapes and pomegranate seeds into the avocado.
- Pile high in a serving dish and sprinkle with additional pomegranate seeds.
- Serve with plain nachos.
