    Gluten Free Lobster Mac and Cheese

    For adventurous cooks this decadent gluten free Lobster Mac and Cheese is fun to make. Lobster season varies by region so when you can buy it, make this fancy pasta dish for your lobster loving friends. You can use lobster tails but boiling a whole lobster is all part of the fun!

    I serve this creamy dish with a simple green salad and homemade vinaigrette dressing. Another option is long skewers of Tomato Bocconcini and Basil served as a starter or salad. These can also be made on toothpicks for a pop-in-your-mouth delight while you're waiting to see if the lobster screams when thrown in the boiling water.

    Ingredients

    Two basics for cooks new to gluten free are a good gluten free pasta (that everyone wants to eat), and a white sauce recipe. Then you're cooking!

    • Butter - The real thing.
    • Garlic & onion - The key to so many savoury recipes.
    • Cornstarch - My go-to thickener for sauces.
    • Cream & milk - For a decadent sauce you want that fat so buy some real cream as the recipe says.
    • Sharp cheddar cheese & Gruyere cheese - The combination of cheeses elevates the basic sauce for this recipe.
    • Lobster, whole or tails - Buy fresh when you can.
    • Gluten free pasta - There are great brands out there. Try them all and pick your fav.
    • OPTIONAL: Gluten free breadcrumbs, Parmesan cheese & parsley

    Instructions for Cooking Lobster

    Lobster - Cooking a whole, live lobster is a culinary challenge, only in your mind. They are simply boiled and people do it on the beach. Getting the lobster meat out of the shells is more of a challenge. If you're not up to it, lobster tails make the same delicious dish.

    Gluten Free Pasta - Pasta has come a long way in the gluten free world. With so many brands available you need to put some effort into finding one you like. Follow the package directions, which are not all the same, then cook accordingly. Do head-to-head comparisons and have a little fun refining your palate.     Cheese Sauce - My basic white sauce recipe reminds you not to stir too vigorously and to add the milk in stages to ensure your sauce is nice and thick. Check it out if you have not mastered the basic recipe.

    Substitutions & Variations

    Sauce - This recipe started with my basic cheese sauce, the one I use for everyday macaroni and cheese. I added a bit of onion and garlic, used a combination of cheeses, and folded in some lobster. Substitute as you like.

    Equipment for Lobster

    It wouldn't be a lobster boil without disposable lobster bibs and lobster shelling tools. These are the tools to get lobster and crab meat out of the shells. Make your dinner a real culinary experience that ends with a big dish of this lobster mac 'n cheese.

    Top Tip for Gluten Free Pasta

    Find a pasta the whole family wants to eat! There are many gluten free pastas available so you can find one. Check out Italian stores too since Italy has a good awareness of gluten free and makes quality pasta. Once you have one, buy it in larger packages to decrease the price.

    Ingredients

    • 4 tablespoon butter
    • 1 garlic clove, minced
    • 1 tablespoon finely chopped onion
    • 3 tablespoon cornstarch
    • ¼ teaspoon salt
    • ¼ teaspoon pepper
    • 1 cup cream (10% or higher)
    • 1 cup milk (1% or higher)
    • 1 cup crumbled, sharp cheddar cheese (half a 230g tub of sharp cheddar)
    • 1 cup grated Gruyere cheese
    • 4 lobster tails (or 2 whole lobsters)
    • 1 pound gluten free pasta

    OPTIONAL CRUMB TOPPING

    • ½ tablespoon butter, melted
    • 3 tablespoon gluten free breadcrumbs
    • 1 tablespoon Parmesan cheese optional
    • 1 teaspoon finely chopped fresh parsley
    • GARNISH – fresh parsley, grated parmesan cheese and lobster shells
    Prevent your screen from going dark

    Instructions

    LOBSTER

    • Boil lobster in salted water for 15 minutes. Cool quickly by placing it in cold water. It can be refrigerated over night at this point. Remove all lobster meat, cut into bite size pieces and set aside.

    CHEESE SAUCE

    • In a samll saucepan melt butter on medium low heat. Add onion and garlic, sauté for 5 minutes.
    • Add cornstarch, salt and pepper and whisk until smooth.
    • When slightly thickened slowly pour in a third of the cream and milk, stirring constantly. Allow to thicken then add the next third of the milk. Continue to stir over medium heat until sauce thickens, add the final third and sitr until thick.
    • Add cheeses and stir until melted. Set aside.

    PASTA

    • Cook pasta according to package directions. Drain and rinse.
    • Pour cheese sauce over pasta, fold in lobster meat and portion into serving dishes.
    • Top with crumb topping or Parmesan cheese. Place under preheated broiler for 1-2 minutes to brown topping. Garnish and serve.

    Cooking Gluten Free Pasta - Learn to precisely time your pasta to cook to your liking. Rinse it to stop the cooking process and serve it as quickly as possible.

    More Recipes Using White Sauce

    • My basic white sauce recipe is made with cornstarch so it has always been gluten free. It's a recipe kids should learn so they can make their own mac and cheese at home. I know you can buy it in a box but read that ingredient list on occasion and come back to homemade when you're ready.
    • The best use of leftover white sauce or cheese sauce is the fancy French grilled ham and cheese sandwich called Croque Monsieur.
